Here at HD2 we like to keep ourselves updated on what's going on in the many industries we serve. Luckily for our stomachs and our eyes (I mean...just look at that pizza up there!) we serve a ton of restaurants. So, we'd like to take it upon ourselves to share these cool restaurant terms, you know...just in case you're ever in an emergency and need to know what barding means. Allow us:
Barding (v.) to cover a meat with a layer of fat, such as bacon, before cooking, effectively maintaining the moisture of the meat while it cooks to avoid overcooking.
